The chuckie experiment has begun, got two thick cuts and am going to do each a little different.  The smoke will take place on monday morning so today I put together the marinade and rubs.  They were both coated with course sea salt to extract some of the liquid and tender them up, this sat for about 2 hours.  Next the one which will be sliced was coated with rosemary, thyme, garlic powder, and a little cayenne.  The one that Im going to pull is packed in beef broth, worsteshire sace, and a little montreal steak rub.  Both are vacuum sealed.  I cant wait to smoke these, I think im going to go with a light hickory at first and finish with apple

Everything looks great so far. I do have a question isn't this alittle early to marinade for Monday smoking. Just me asking I have always been under the assumption that you marinade for 24 hours is alot.
 
You can marinade for more than 24 hours.  It will help the product pick up more flavor, but it should not hurt the product.  I have actually marinaded boneless pork chops, that were vacuum packaged, for 3-4 days.  You just end up with a very high flavor profile.
 
It is more than usual, but i wont be around tomorrow to do it and theyll be going on super early monday.  Well see what happens
 
So there is no issue with over marinating...these came out awesome.  The sliced one was a little too dry for me though, definelty will foil both next time.  Not a loss at all on the unfoiled one, just put it in the crockpot for a few hours and softened it up.

Mine was in the freezer from a 2 for 1 a few months ago. It's always fun to see what kind of cute little bushy tailed rat she comes up with.

Boxers, Ninjas, and that last one on the motorcycle heading for Oregon to Johnny's place, I don't think made it. He looked like one I saw road-killed.
