Chuckie vs. Brisket enlighten me

I have been away from the forums for a little while (but not the smoker) and I come back to see all the drool-o-rama around the chuckies. I'm inspired to do one for my next smoke but just wanted to ask you all how they compare to brisket?

If someone put shreaded chuckie and brisket side by side could you tell the difference? Also I sometimes (not always) stop my brisket a little early to slice them, how does a chuckie stand up to this technique?
 
For slicing I think I prefer a chuckie for pulling I'll take a brisket. The biggest thing for me is I can get smaller chuckies and therefore get them done much faster
 
Really? I prefer it the other way around....slice the brisket, and pull the chuck. Then again, I haven't tried to slice a chuck...so, I can't really comment on how that turns out...

I think the best way to find out is to load up the smoker and try them all side-by-side.....

I have cooked many briskets and never a chuckie.I am doing 2 wednesday(chuckies) and plan on slicing one and pulling the other.Probably slice the one at 190 and pull the 205..

If it is any help i plan on posting results.....
 
I'm with Piney on this one. I too like to pull the chucks, and slice my brisket. That may all be the way my processor cuts my beef, but it seems the logical way to go with what I get from him. In any event its all good stuff.
 
I cann't answer this one for that I haven't smoked the two together. I'm with jerry and mule packin and that I would rather slice a brisket to me thats the only way to eat one. The chuck I always serve it like a steak @ med rare to me thats the way to eat a nicely smoked chuck roast but I will try pulling one here very soon.
 
I always pull chuckies and slice brisket. Anyone who is familiar with brisket will definetly know a difference in the two meats if placed side by side based on taste. To me chuckie have a different flavor which to me is a meatier flavor. I love both but again to me they are not comparable.

I've done two briskets and maybe 3-4 chuckies since I started the smoking...

I think a brisket sets up very good for slicing, and to me - a chuckie doesn't slice so well, but pulls awesome. Just my opinion thought - but either way, they both taste great!
 
I've cooked a number of Chuckies, but never a Brisket, although I've eaten Brisket at Q-joints many times. I really like my Chuckies, but have to say the Briskets I've had I thought were better tasting. I think I could tell the differance side by side. Still, I like my Chuckies enough that I don't fancy the idea of an all night smoke just to compare it.
 
I am glad to hear even doing a chuckie med rare works. Think I may try this and taking another to the other end and pull it.
