Saturday I did two different types of cuts of chuck roasts. You can read about the winner here...

As a quick recap, here's a shot of the two different chuckies all pulled. See the top link above for details on the whole cook. Most of it was bagged up and given to neighbors as some payback for, well, being good neighbors.

Tonight got the ingredients ready.

Shredded beef, enchilada sauce, shredded cheese mixed together.

Laying out the tortillas and filling with the mixture.

Rolled up four of these beauties and stuffed them into an 8"x8" casserole dish and slathered with the canned enchilada sauce

A generous sprinkle with shredded chedder/jack blend cheese

threw them in the fridge for about an hour while I waited til it was time to eat. I was obviously ready earlier than the wife or I would have waited to prep this. No harm though. Popped them in the oven at 350* for 20 minutes then the broiler for 2 minutes.

A couple plated up with some sour cream and hot sauce (Cholula is my favorite) and a side of refried beans with the shredded cheese blend.

Very tasty! Yeah I know, I skipped the eggs. Wife said no way.

Now that looks awesome. I could eat a pan of those and have a nice cold brew with it.

Uuuugggghhh. I can't take any more enchiladas. After the dinner posted above which was Monday night, there was still one leftover which I ate for lunch on Tuesday. Then last night (yep still Tuesday) my wife said "Those enchiladas were great. Can we have them again tonight?" So I said sure. And guess what? There is still one leftover that I'll be having today for lunch. I've had enough. Gonna take an enchilada hiatus for a couple of months after this. LOL

At least she's now requesting smoked meat!
 
I don't know there Dude about taking a couple of months off from those enchiladas. They look some good specially with some great smoked meat inside of them. I don't knowmaybe a week and you'll be jonesing again.
 
That's what I forgot to pick up while in ND this weekend! Enchilada Sauce!!!

Wicked meal you got going on there Dude! Really great way to use up some leftover smoked meat. I'm sure that smokey taste was present in every bite too.

I didn't forget my Cholula though.

People look at my like a crazy person when I load up a full shopping cart with BBQ Sauces and Hot Sauces that I can't get in Canada and bring it to the check-out at Super Target...

Looks great Dude! Nice job on the leftovers.
I do have an idea, if you find yourself tiring of the enchiladas how about rolling one up in a chub of sausage and turning it into a fattie?
Just make sure you don't overdue it with the fatties, I kind of put myself on a absolute no fattie smoke regiment for a few months because I had made soooooooooooo many I kind of overdid it.
Blasphemy many may say...but it did happen, thankfully I am well over that now
