Chuck Roast

    The other day I was in the store talking to a buddy of mine that I ran into there.  I was telling him about the Fatties I found on this forum and urging him to give it try.  While doing that I noticed a lady listening in on our conversation.  She interupted and asked a few questions.  Then she told us a chuck roast recipe to try.  So naturally I tried it out.  It was out of this world.  I did not get any pics but man was it good.  My wife had fourths and she doesn't usually get seconds.  Here it is: 

    Season your chuckie the way you like it.

    smoke at 225 for about 2.5 to 3 hours.  I used hickory but whatever you like is fine.

    put in baking dish and pour 3 cans of beef gravy over it.  (you can make your own but I was short on time)

    cover dish with foil and cook for 1 to 1.5 hours at 350 in the oven.

    It shredded up great and we put it over toast and mashed potatoes for a hot beef sandwich.  Next time I am going to put potatoes, carrots and onions in a separate dish and smoke with the chuck roast.   Then finish like above.  Like I said before everyone loved it and only had left overs for the next day at lunch.  It was pretty easy to do and quick for smoking something.

    Chuckies are awesome. I do mine pretty close to how this recipe is and they always come out so nice and juicy. I always try to make two or three and freeze a bunch as it's great to have left over BBQ in the freezer for a quick meal.

    LOL, 3 cans of beef gravy on a old shoe would probably taste good too. [​IMG]

    I do an Italian beef sandwich similar to this .i take a piece of briskat  cook it for 4 hours with the usuale suspects .let the meat coll ,strain The cooking juice add to it salt pepper garlic paprika and kitchen bouquet mix well and bring to boil .slices the meat thin in to a dish pour  in the gravy cover with foil 350 for 2 hours. it is to die for .it is a recipe from Diners drive ins and dives  ( I don't have pix for it due to it bin cooked not smoked)
