Chuck Roast Smoke (last weeks newsletter)

    That looks delicious. Question for you. How did the veggies taste? I've smoked a two chucks before and through the veggies in the smoker but in a separate pan. I thought they treated real bitter both times. I figured maybe too much smoke does that. Maybe if I do them in the same pan they'll be better.

    The vegetables were great, tender and sweet. I used only bell peppers, and red onions. I put the roast on top of the vegetables when it was at 154 internal temperature. I poured 1 cup beef broth on the vegetables, but dont think i needed to, you can see there is plenty of juice.
