    And Yes Guys---That Hot Roast Beef with Gravy was the only thing I ever ordered when I was a Kid & my Parents would take me to a Restaurant.

    This was so inspiring I have on in the SV now and it will be ready to come out of the bath at 1430 CDT this afternoon. Just in time for a sear and rest for supper :)

    Very nice Chuck! I’m sorry I’m late for the party, any leftovers still?

    Haven’t gotten a chance to use my SV much lately, chuck roast will be on the list.

    Out of all of my successes with my SV, the Chuck Roast done this way was by far the Greatest Surprise.

    We just did it again on Monday, and invited Bear Jr & his wife. Watching a football game on Sunday, I started it an hour late, but it might have even been more perfect after 21 hours instead of 22 hours.
    Amazing how a $2.99 a pound Chucky can be like a Giant Tender Steak.
    That 2 1/2 pound Chucky fed the 4 of us with two Sammies for me the next day with the leftovers.

    I will try this. I have a few chuck roasts in the freezer. Only thing is, I will thaw before SV so I can season them.

    Have you tried a seasoned chuck straight from the freezer yet?

    Also, I bought a weed torch from Harbor Freight for $17. Best $17 ever spent! I’m hoping it will do double duty to sear meat after it’s finished in the SV.

    I try to season before I freeze, but I generally Thaw before I put it in, because that's what I've been doing with everything else for years.
    I did one thing so far from Frozen (Eye Round), and I worried about it the whole time, not knowing how long extra it needed.

    It was quite tasty if I do say so myself.

    Served with:
    Mashed taters
    Yorkshire puddings
    Gravy (Of course)

    I enjoyed your thread.
    You deserve to have a small tabletop size tripod for a camera. I used to have one with telescopic legs that was pretty compact.

    I kind meant you could use a smallish tripod to take pics because you have mentioned your hands shake some .

    "Thanks Al !! But now I have to not shake when I take the Pics!! As you can see it's more noticeable on these Pics! "

    I’m late coming to the party as well. Reason was I was at my butcher’s buying (oh by the way) some chucks. Got some prime CAB beauties. Goin in the bath this evening then pulling and heading for some smoke.

    I agree with you this is a great go to delicious alternative to ever increasing costs for the better cuts. London broil is also going on the pit for low and slow. Cudos and points for you sir!!

    These Chucks work Awesome this way.
    The Jury is still out on my Top rounds. I did one & it was quite chewy.
    Gotta keep working on that. I'll get it next time!
