chorizo help too please

    bought some chorizo and stuffed in abt's very tasty want more. i got richtee's recipie now i would like to stuff some i have a home made stuffer i need to dig out aint been used in decades but its stainless. what kind and size casings do you suggest and what temps and wood getting hungry for this.

    Kutas calls for 35-38MM casings... Mid sized hog I'd think. Inch anna half ish.
