Made a new awesome recipe for Super Bowl Sunday. I pulled out a pork loin to throw on the smoker. I butterflied the loin and stuffed it with a mixture of cream cheese, mixed with chipotle peppers in adobo sauce. I then wrapped the entire loin in bacon. I applied my rub to the outside of the bacon, and put it on the smoker at about 250. It took about 3 hours. It turned out amazing with the spice from the chipotle peppers. Would definitely do this one again.
