My wife loves me! Or my meat! LOL!! She bought me two of these pork loins. I will cook the first today.


Out of the bag and trimmed. cut in half. I will cook it all. Call me old fashioned but I love the neighbors and they love me when I smoke! LOL.

I am doing a chipotle rub. I use a basic rub close to many of the recipes here but add chipotle powder. I get a very fine powdered chipotle powder from my family in El Paso TX. They get it from Juarez Mexico. I use a lot of it, Hence the dark color of the rub. I do not use any kind of sugar or honey. I am from the southwest and am not used the sweetness although I have tried some form SMF and liked them.
OK here are the two rubed and ready.




I am going to fire up the fire box and wrap my probes. Will post more in a little while
 
I don't post on here much, but I have to admit I can't wait to see the finished product on this one. That chipotle powder sound awesome!
 
OK, Fired it up and put them on with the trusty ET-73 thermometer.

Smoked them at 240 degrees to an internal 178 degrees. Spritz them every 45minutes with burgundy wine. Took them off wrapped them in foil and let them rest for twenty minutes. The juices were running everywhere.

Sliced one up for you guys. It really came out good.

Those look great. Sam's club has a course ground Chipotle rub in the big plastic containers that is great. I did a loin a good while back with it and I think it was the best loin I did yet ! Great flavor.
