chilaquiles.....mexican lasagne

i used smoked butt with an achiote marinade......on 2nd shelf.

this is one of my favorite dishes to make and eat as well!
just a couple of notes......
some fry the tortillas.......i don't.
i use menonita and oaxaca cheese......use what you like.
i use green sauce........use what you like.
menonita is a cross of jack and havarti....creamy and full of flavor
oaxaca is a mexican mozz string cheese....but a lttle drier.
we top ours with "crema" which is a mexican style of creme fraiche
i don't use recipes so don't ask me for one, but if you have any questions on how or what let me know and i will help you the best i can!

for this.....I do miss Arizona some times when I see things like this. Me and the wife get her family to stock us up every time they go to mexico or just get stuff from az and send it up here to wyoming...you definitely know what is going on with chilaquiles....only suggestion is to smoke it instead of bake it at the end.....Man I am jealous.....for me to get good mexican cheese I have had to learn how to make it up here. which is pretty cool actually. My father in law sells mexican cheese down in phoenix. any ways great job !!!!
 
i found a can of red beans........this is a dish that will take anything you an throw at it. i think roa.... i mean smoked corn would work well too.
 
Now that is a good looking dish and a differant way for sure but good tasting I'm sure.
