I do not have a walk in fridge. I am limited on space. Meaning i have no space left at all. I make a special from time to time, and there are times the people love it and want it on a regular basis. I made smoked chicken wings, and people went crazy over them. SO my question is this. How can i smoke an entire box of chicken wings in my cookshack sm160, then freeze them within 3 hours to follow the servsafe guidelines. Then how would i warm them up. I opened a restaurant, and have been going strong fro 5 months now. I have never ran a restaurant before, just had a passion for smoking. So i ran head first into traffic and did it. So far so good, but i just run into these issues from time to time. On  side note, is there a better yet cheaper alternative to food saver bags?
