chicken was rubber?

I have had the Mrs. pick up Chix Breast on sale and they were HUGE. Each lobe was just over a Pound! A 10 lb bag had 8 Breasts in it...These were tough as well but had good flavor. The problem is they are from older Chickens very likely Layers past their prime. These will taste great but can be tough. Given the choice, look for Breasts in the 8-12 ounce range, these are from younger Chickens raised for eating and will yield a better product, Don't forget to Brine as well, goes a long way toward tender flavorful Chicken ...JJ
 
was the meat rubbery or just the skin?
 
Just a FYI. I take those chicken breast that look like they came off a turkey and slice them across the breast In aprox. 1/2 " thick slices and sautee them in a little compound butter to 160 internal. Fantastic w/ some steamed veggies and cheese sauce.
 
Were they frozen,thawed then smoked

yes frozen thawed then cooked


bingo........... I bet that was your problem.... I hardly ever put chicken in the freezer. unless I use it for soups. Buy it, prepare it then cook it....I would give that a try and I bet you will be happier with the results..
