Brined some Thighs over night rinsed and dried in fridge

seasoned with a little rub.




Set the charcoal on a piece of expanded metal on my side burner.



Started using the snake and was not pleased with temp



Reset set the coals into the basket no pics



temp stayed pretty steady gained a little towards the end



Pulled at 175* going to give Tamales a shot any help on this

Looks great.

I love pecan, but have to buy it so my go to is oak for birds.
 
Nice looking chix! I like to mix pecan and cherry for my chix,and everything else.
