Chicken Thighs, Fatties and ABTs

I wanted to do a "short" smoke today so this seemed to be a good choice. The chicken was seasoned with Ted's Seasoning. One fattie is stuffed with caramelized onions and cheddar cheese; the other one with peach preserves. I threw in a sweet onion just to see how that would work.

I had some problems keeping the temp up where I wanted it. It has been in the 50s with a cold rain off and on today. Temps spent a fair amount of time down around 190. The thighs took nearly 4 hours. I also discovered that there are some hot and cold spots in my smoker. (at least under today's conditions)

Hmm... I tried to add some Qviews but it tells me my files are too big. I'll keep trying and see if I can get something figured out.

Looks good! Peach preserves huh? How was that? I use apples alot but never tried preseves does it hold up? I would have thought they'd melt.
 
They did sort of melt into the meat adding a sweetness to the spiciness of the sausage. The chunks of fruit in the preserves were left behind though. I think if I were going to do it again, I would use a fruit preserve that has a "stronger" flavor than peaches, but peach happened to be what we had on hand.

Peach preserves mostly melted into the meat, but you can still see some chunks in the roll. The fattie on the right has cheddar cheese and caramelized onions.

Looks really good Terry! I'm gonna try apricot I think. I love apricots and they are a tad stronger tasting. Maybe with apricot wood to eh?
 
Yeah, I would definite use something with a more assertive flavor than peaches. I was thinking that something like strawberry preserves or some other berry might stand up to the sausage better.
 
I like the idea using the peach preserves, many fruits go well with pork. I like your Q Views, nice and clear, giving an invitation to try and taste.

I used alot of shredded apple in my fatties and like that alot so this might be something different for a change - thanks!
