Chicken quarters

  1. Brined for 3 days with a little pink cure too ....air dried and rubbed

    After two hours and 180 degrees I pulled off smoker

    Served up with a vegi rissoto

    Looks awesome.

    This is a good example of meat that is thoroughly cooked but is pink.

    I am forever telling folks that I cook for that raw chicken is sort of translucent and pink is due to a chemical reaction., from smoking and cures such as sodium nitrite

    And in your case the cure added to the pink appearance of the chicken and looks great!
