Mighty tasty first attempt from low and slow cook book by dave wiviott. And my first smoke from my 22.5 wsm. The cooker has been running at 275 since 530. Very impressed with how well it's holding temperature for 4+ hours blows my weber kettle grill i was using to smoke out of the water

Nice job.  If you follow that book from cover to cover you'll know your cooker by lesson five.  Mr Wiviott has a shtick that I had to get around but when I realized it was just his thing I realized I could learn from him...and did.

Yea I have read the book cover to cover and now doing the lessons. I am trying my best to follow his instructions lol. Lump in My area is over a dollar per pound and im semi tight with money so finding that difficult lol

Little did i know menards was the plaxe to buy lump charcoal. They have royal oak 8.8 lb bags for 6 bucks....... Thats a little more reasonable than walmarts 10 lb for 14

35+ hours..... Got rained out Thursday night :(
YEOWWW !!!  Did you find all that citrus made the chicken kinda mushy though? Citrus tends to cook fish and chicken. I will do beef in mojo overnight. Chicken no more than a couple of hours. Did you make your own or buy a store brand?

I bough goya brand..... And neither my wife or I thought it was mushy
