Cooking over wood embers, not directly on wood flames.

Basted with 4 TBSP each of butter and lemon juice with 1 tsp of Penzey's Bavarian seasoning and a dash of granulated garlic.

About an hour and 15 minutes. Tender, moist, good, a touch of smoke.

The black frame is Texsport Rotisserie & Spit Grill.  Modified to use electric rotisserie on sale at Home Depot.
