Hey SMF Family,

I have a couple of questions.  I have never prepared food for more than a family or two, but am having a nice sized fight party this weekend.  I will be doing some ribs in my SI #3, but I want to do some chicken in my LM 3895 GWLA.  My questions are:

1.  Can I use wood chunks instead of chips?  I have chunks that were cookshack cut and they are awesome.

2.  If I use chunks, what would be the equivalent of chunks to chips?

3.  I have the traditional AMPS, not the one for gas, can I use this instead?  If so, where should I place it to get the proper air flow and not too much heat?

4.  Finally, the advantage the LM has over the SI#3 is the temps.  The LM can go to much higher temps, meaning, the wings will be crispy.  What is the suggested temp and how long should they cook?

I will be using a mix of Pecan/Apple chunks, or Pecan/Cherry chunks.  Not sure which one is better, but I don't think I can go wrong with either.
