Chicken Enchiladas!

    Smoked a couple chickens last week and took one out of the fridge, shredded up a bunch of it and made chicken enchiladas using smoked chicken. Didn't make 'em in the smoker so no QView, but wow.... whole family wow as well.

    So if you have an abundance of smoked chicken and you haven't tried it, you're in for a treat.

    Man, this is a tough crowd! :)

    I'm about to drop the 2 chicken carcasses into a stock pot and make some chicken stew. I'll take a picture when it's done. :)  My wife thinks it's hilarious that I'm taking pictures of food.

    Actually, as a new guy, I'm also just seeing what works as far as using the things I smoke. The enchiladas were a hit. I want to see what kind of interesting flavoring I get in a chicken stew made from the smoked chicken. I'm going to get at LEAST 5 meals out of 2 smoked chickens, and possibly 6 meals. Now, granted, there's only 3 of us (my wife and I and one of my sons) and sometimes one of us isn't home for a meal, but still.... 5 or 6 meals for about 8 bucks worth of chicken is pretty good.

    My 3 pound meatloaf lasted for 1 dinner and at least 5 lunches and one breakfast (with eggs).

    So it's not just a matter of how much fun I'm having, or how much we like the food, but also how economical it is. I know some of the cuts I'll be doing will be more expensive, but for now I'm really happy with what I'm learning.

    And I thank you all for the encouragement, tips, and for putting up with my prolific posting. I know the veteran smokers are getting a giggle out of it, but I'm hoping other newbies will get something out of my posts as well. :)

    Lots of folks here like to see Food  and RECIPES! If any component is smoked or it's just a Favorite Non-Smoked Recipe, post it with some pics...Man does not live by Smoke Alone!...I try but my wife doesn't think "Everything" has to be smoked!...JJ[​IMG]

    You get enuf stock & you can make yourself one fine Gumbo with some of that shredded chicken as well.....that will give ya another 3 meals or so
