chicken dumpling soup w/qview

kinda cool and rainy out today, no smoke today but found this chicken in the freezer. its getting kinda empty in there... put in a pot...

cover with water bring to boil and simmer till tender, be sure to season with salt and CBP. meanwhile gather the veggies.

chop them up how you like them, i used carrots, celery, and half a large onion.

when the chicken is tender, take tongs and remove the birdy from the water, actually now we will call it soup... dump in all the veggies and let them simmer til they get tender. while thats happening pull the chicken apart and separate the meat from the bones and tear/chop into pieces.

next we prepare the dumpling mix, its not really the traditional dumplings but this is how my mother made it when we were kids... 3 eggs in a bowl and a cup of flour to start. i also like to add dill, i had just a tad of fresh and some freeze dried here.

mix it up briskly with a fork... this is what will start to look like but this is too wet yet.

sprinkle in flour a tad bit at a time.

until the mix dont want to pick up anymore flour, will look kinda like this.

now that veggies are done, chicken is back in pot, i like to use some old fashioned type noodles... i know i really should make my own.

add the noodles however many you like.

now take a teaspoon, dip into the soup pot, so it is wet, and get about a half teaspoon full or so of the dumpling mix...

get all of the little dumplings into the soup and let it simmer, you will notice that after a while the dumplings will all rise to the top and will have quadrupled in size or better.

and the finished, nothing beats moms cooking right, but mom never had veggies in the soup nor did she add the dill to the dumplings. have to say this is moms kicked up a notch.

I wonder how that would have tasted if that chicken were smoked? Do you know if boiling after smoking removes flavor?
 
I love Kluski noodles, I love dumplings, I love chicken soup.

I guess that's a winner you got there in my book.

thats the idea Laurel... point of it is, this is a meal my mother made, we lived on a farm, grew our own chickens, had huge gardens, butchered our own pork and beef etc etc... pretty much self sufficient. when we were kids we wanted to eat what our cousins who lived in town ate. it was better-aaaarg!!! we didnt know how good we had it til we were on our own. now that i am into this food stuff, and have learned so much from people who do great stuff like yourself and others, not only do i want to keep up with the smoked stuff but revisit my childhood and learn some of this stuff. my mom is still around to help me out if i need but i cannot take that for granted as she is in her 80's. in return i spend a little more time with her and i think she likes the idea of the old stuff being passed on. i want to get as much of this stuff down to pass on to others as well as my family so they may also enjoy how something so simple can be so good...
 
It has been awhile since we have seen you out there Erian. Now you have made up for it with this soup it looks fabulous and I can just bet it is delishes too. almost want you to get sick for a bowl of it.
 
didnt know i was that scarce lol... and dont wait to get sick for this, enjoy it more when not!!!
 
That is exactly what my German Great Grandmother called pot pie. I can still hear her with her accent saying pot pie. It was chicken and dumplings to everyone else, but undeniably delicious. I still try to make it taste like hers with little success. Hers got a thickness from the dumplings that I can't duplicate. Maybe it was the flour they used almost a half century ago?
 
We still make that here in Dutch Country, and yes we call it Chicken Pot Pie. We usally put potatos and what we call rivells ( dumplins) in with the chicken. We also make a Ham and bean soup, we use navy beans and again make the rivells. Now I know what dumplins are, they are rivells!
