Chicken....BANG!!!!

    Never try a new product when yer tired, sore and cranky....[​IMG]

    Ok, so I went thru hell today but I won't get into that. I bought a whole chicken from Sams the other day and had to get it cooked before it went bad. So I figured I would try out my new MES, big mistake!!!! Not sure how this thing reacts yet so I'm losing my mind. Opened the door to insert the probe and the temp. droped to 170. Smoker temp. is now at 203, the bird is at 145. I'm ready to open up my .454 Casull on this thing!!!
    I know, I know, patience. Right now I have very little to none. [​IMG]

    By the way, do ya get heavy white smoke every time ya add more chips to this smoker?????

    Ok, it's done and came out better than I thought it would.
    It was actually very juicy and tender. But the camera is sucking!!!

    I agree that camera sucks but the question is how did it taste ? Would you do it again? Review please.

    Looks good Steve, and it will get better once you get use to the MES. And as far as having a sucky camera...I'm thinkin it might be the operator. [​IMG]

    The MES likes to be pre-heated all the way up to temp and left for about 20 minutes more at that temp Before adding the meat. If you have the water pan filled to capacity with boiling water that helps with spikes too. I can't speak for sand as a heat sink because I haven't tried it enough. But others had said that helps with spikes as well.

    One hates to say this but qview also costs you some time and temp. You lose a lot of heat while that door is open and you're fiddling with the camera. I seldom take inside the MES shots during the cooking stage for that reason.

    Also your MES doesn't need much wood. It is quite easy to overload it.

    If for some reason I have to open the door to the MES for whatever reason, I give it about a minute for the element to cycle on and get real hot, that is when I toss in a little more wood. With the element on and hot I get thin blue smoke instead of billowing white smoke.

    Now chill out and eat your Burd...[​IMG]

    PS. I notice that the bird is still trussed at the drumsticks. You should cut that string about 2/3 of the way thru the smoke and open the legs a bit. This gets the skin thats on the inside to crisp up and also get it to the finished temp a little quicker.
    I know I'm being pickey here, but check out my avatar for the answer to that.

    Hey that chicken came out looking pretty good. As far as the camera, try shutting off the flash and take a pic or two without it. Sometimes that does the trick in some types of daylight-closeups.

    Your right about that not trying anything new when your cranky and sore but I have to give it to you... It looks wonderful!!!

    Well it looked pretty good, sorry to hear about the troubles you had. You're 100% right about not messing with something like that if you are in a fowl mood.
    Get it? Fowl mood? Ok, I know-not very funny [​IMG]

    My Sister does fancy photography shots and such and one tip she gave me before is if you are having issues with the flash being too bright but still need to use it then put a thin tissue over where the flash comes out, this way it will filter and calm the light but will still flah enough to brighten up the shot.
