My day off today and it is nice out for this time of year so I am smoking some Ribs, whole chickens and the bacon wrapped chicken breasts. After seeing the post on the chicken breasts I had to try them.

I was injecting the chicken and was not ready for the blow back... :o Good thing the wife is not home


Full smoker... Just put on the rest of the Bacon chic... Almost time for a COLD one..





4pm 163 degrees Almost done with the whole chicken..
Ribs in foil till around 5pm
Man I need to work on my wrapped chic... I got Cheese all over the smoker >:( :-/
 
Heh you been spattered! Hint: Insert needle and backoff,re-insert a few degrees off.. a couple times..makes "channels" for better retention of injection.

Nice lookin' chow! POINTS! <for the spatter!>
 
Man that looks gooood. My wife always finds out when I make a mess. (Probably because I miss a few spots)
 
All done... Everything was real good.. I think I got the smoking bug out of me for a while now..
 
Looks very yummy! How did the bacon wrapped breasts turn out? Is that ham in the middle of the breasts?
 
Yep, thats my question too. Lets see those chicken breast.

I used the Clorox wipes, they work great.. And getting to it while it was still wet helps..


I followed hillbillysmokers recipe from his thread.
Turned out real good. I bought the thin sliced Perdue chic breasts at the store and used them for this. I was too lazy to cut up regular breasts.
I used provolone in some and swiss in others and yes that is ham.
I had the deli person slice it thicker for this use.
The wife liked it a lot
