Well they started off supposed to be poppers when I went to the market but in hind site theyre a bit bigger than that. I used boneless chicken thighs that I pounded ,stuffed and rolled. The stuffing is pineapple ,jalapeno, green onion, butter and fresh bread. MMM smoky pineapple.

the wifey was looking over my shoulder when I was looking at the goodies, she said OMG you WILL MAKE those for Mondays picnic.

It was not a request, A DEMAND.

so ........um.........thanks, sometimes it is fun to be an abused husband

Thanks Sumo. I really only completed 50 % of what I set out to do but didnt have enough chicken. The second batch(Ill hopefully do tommorow is gonna be fine chopped fresh chicken, jalapenos, cilantro and cheeses. The pineapple was a great idea though inspired by rappin about Dutchs beans this morning. Using chicken thighs ensured maximum moistness. After the picture was taken I whipped up some molasses, ketchup and dry mustard for a bit of dipping sauce.
