I've used everything from a steel, to crock stix, to wet and/or dry stones, and Ive never seen anything that puts as good an edge on a kinfe as quickly as my Chef's Choice. It does everything from a quick hone to creating an edge on a knife that never had one, and in less than 5 minutes.

I've got the one w/ 3 wheels ($100 dollar range). I see where they have a commercial grade available now too.

Does anyone else use one of these? What do you think of them?

I use and sell Chef's Choice. Absolutely the best sharpener on the market. I have sold hundreds and have never heard a negative comment. Also, I have never had to take one back for repair.
I sell alot of related items. Sharpeners, cutlery, slicers, vacuum packers, etc.

I don't remember where I got mine, maybe Bed Beth and Beyond, but it works very well, maked even the cheapest knife seem like the best knife in the world.
Another one of those things you don't know how much you need until you have it.

I saw one while @ a local restaurant supply store once. It was the commercial grade (silver). They told me it had come back from a local High volume Q store and that it was 5 yrs. old. It looked like it had gone thru a disposal then been run over by a truck. If I remember correctly, they said Chef's Choice would "refurbish" it for $50.00. Amazing!

  OK, I guess my computardedness is hangin' out. I just tried to post a link by copying it from my address line, and pasting it onto my post. I never tried that before, and it looks as thought the URL pasted, but it won't link. Can someone teach me how to do this correctly? How 'bout you Mr.Bobqn?

Thank you, kind sir for your benevolance toward the computationally impaired.

You are welcome. I've got to remember the term "computationally impaired". In one of my lives I was the tech coordinator for the school district where I teach. I ran into quite a number of people who were truly computationally impaired. You are doing quite well. Keep at it.

It must be some of that temporary perfection being creative. I love that tag line.

Do good!

The #120 is the one I have. I don't know the difference between it and the #130. I wouldn't recommend the lesser model. I tried one and it's no where near the same product.

Those look like very good prices gunslinger. I paid more than that @ academy sports years ago.

BTW Gunslinger, what part of the Ozarks? I'm up and down I-44 frequently.

The 130 is a commercial grade appliance.
I live east of Springfield about 20 miles. If you take the Marshfield exit which is exit 100 and head south, you'll run over me. You can spit on Marshfield from the house, but it takes 45 minutes to drive it. I love these hill country goat trails. I am 2 1/2 miles northeast of Fordland.

I never had the money for one of those fancy units, I've used a plain Jain whetstone in the past, and for a premium edge, a Lansky sharpener.

But When I was fishing in Oregon the pros who cut fish on the docks(lightening fast!) all had wicked sharp knifes, and they all used one of those yellow plastic sharpeners that look like a pair of brass knuckles and has a notch for the edge of the knife. They would draw that thing down the blade a couple of times every other fish or so and kept it in the scabbard on their hip with the knife when not in use. This was also followed with a few passes on a steel.

So I bought one of those for myself they are only a few bucks, and while it's true you have to use it frequently and it will eventual eat up your blades, it works very well and doesn't cost much either. Coupled with the cheaper white plastic handled restaurant quality knives available at Sam's You can get a sharp edge for cheap and if it gets to thin over time your only out about six bucks. You can buy a lot of those sharpeners and new blades for the price of that fancy machine.

I have always been struck at the emphasis on premium knives, particularly for wedding gifts. I'll take a well-sharpened crap chef's knife from my mother-in-law's knife drawer over a dull any-brand-in-the-world knife. Problem is, it's a PITA to sharpen knives. I have been looking for a good electric, but they can get spendy. Thanks for posting.

Plum, I picked up this  sharpener for a good price on Amazon. I've used it a couple times already and I love it. I've used it on a Dexter boning knife and 2 Cutco knives (butcher knife and chef knife). It's not expensive in retrospect of all of the others and does a great job.
