If is going to be on the smoker for a couple of hours I don't think it's a big deal.  I wouldn't smoke frozen cheese but the time it takes a  small chunk of cheese to come to room temp from ref temp is not that long.    Room temp is probably more important for large pieces of meat that will hold the colder temps longer
