I wish I had thought to take pics, you guys would get a huge laugh!

I was doing so well, bought the cheeses, cut them just right, placed on the rack, added apple and cherry wood that was soaked and since the weather was below freezing, I though perfect time!

Well, I had put four sticks of butter in there as well and fortunately I thought to check it after 30 minutes and decided to remove it. It does have a great flavor.

The cheese looked good at that point.  My MES did do it's job, but I couldn't keep the temp down.  They say that you can get it and keep it at 100 degrees or less.  Fail for sure.

I shut the smoker off and left it to cool after an hour.  I left it closed thinking that the smoke would finish the job, so I fought the urge to open the door.  2 hours later I opened the door and like ice cycles from my roof I had cheese strings everywhere and a puddle of mixed cheese on the bottom rack, which I had covered with foil.  Lucky for me, it made clean up easy!

I decided to go to bed and tackle the issue in the morning.  This morning I cleaned up the mess with the help of the dogs.  I salvaged a couple bags of cheese pieces.  They taste great!  I had an omelet this morning for breakfast and it was just superb!

I am happy for a hobby that you can eat your mistakes!  I have decided to shred all the mistakes and make a four cheese mac and cheese!   Munster, Cheddar, Jack, Mozzi!

I ordered an AMNPS and some pellets from Amazon and Tuesday when it gets here, I am going to try again!

I am somewhat chuckling inside about this!  I do have four sticks of nicely smoked butter in the freezer though!!!!!

Yep wish we had pics but you did the right thing with ordering the amzps from Todd they work great. Glad you got a good breakfast out of it thou

when smoking cheese DO NOT plug the MES in. Just use the AMNPS smoker for smoke and the cabinet to smoke in. If you don't have AMNPS ,you can use a clean tin can and a 25 watt soldering iron and some wood chips.

  The MES will not maintain low enough temps to cold smoke and still get the chips smoldering.

I smoked some cheese a couple weeks ago when we had a storm passing through here in Phoenix and the temps were low(50s)

Even with the MES unplugged my tube pellet smoker brought the cabinet temps up to the 120s. I went to Ace hardware and got a piece of 3" dryer vent tubing( it fits into the chip tray opening exactly) about 3' long and lit the Amps and stuck it in the dryer tube, blocked the open end loosely with a piece of cardboard and put a tray of ice cubes in on the bottom rack.

With this setup I was able to hold 75-80 degrees with good smoke. The cheese was great. Sorry I don't know how to post pictures.
