Cheep chickens

Was at the grocery store this morning and came across a special in the meat case. They had Perdue chickens, average weight 5 lbs, on special for $1.99 each.

I grabbed two, because that all I had room for in the fridge.



The one on the left is rubbed with Penzey's Trinidad Lemon-Garlic Marinade which has coarse flake salt, lemon peel, garlic, cloves and ginger powder. The one on the right has my adapted recipe of ShooterRick's Copperhead Snake Bitten Chicken rub and marinade which I injected into the chicken.

The vidalia onions were cut with an apple slicer/corer, sprayed with apple juice and seasoned with cbp. The red peppers were just seeded and cut in to thirds.



Two hours in to the smoke, looking goood! Onions and peppers are pulled off the smoke, they're fork tender.

Dawn, that just looks awesome! Nice vegs, and the birds...well, I just want to reach into the screen and grab a drumstick! How did the Trinidad rub end up? It sounds very tasty.

Well done smoke and can't beat the price on them chickens, neither. Good for you!

Birds are done

Sliced

They were awesome. The kids dove in and were eating it almost as fast as it was being sliced. There isn't much chicken left.

The family is split on the chickens. Hubby and I prefer the one with ShooterRick's rub, the kids like the Trinidad rubbed chicken better.
 
I like cheep chickens almost as much as charp chevvys. Those yardbirds looks awesome & the Vidalias look absolutely delightful!

glad to see that someone besides me likes the smoked vidalias.
Try peel and smoke whole for an hour. slather w/ butter and season w/ CBP and a lil powdered crab boil or old bay.
wrap w foil and bake for 30 min to 45 min at 325 .
 
Nice one, Dawn! Less than $0.40/lb and looks as good on the table as did to your wallet!

Those rubs look really nice, and that's some great color on the birds!

I picked up a couple whole chickens on sale the other day. I'm gonna smoke them this weekend if I can figure out a good way of doing it. Where can I get this ShooterRick's recipe? I'm sure if I can't find it, then I might figure something out. I hope mine turn out as good as yours did, cauz they look mighty tasty!
