Cheddar and Bacon Meatloaf

    Here's a new one (at least for me) I tried. Family really liked this one ....

    ·5 slices bacon
    ·1 small sweet onion, diced
    ·1 stalk celery, diced
    ·1 bell pepper, diced
    ·1 clove garlic, minced
    ·1/2 cup parsley, chopped
    ·1 cup bread torn into small pieces
    ·2 large eggs beaten
    ·2 tablespoons Worcestershire sauce
    ·1 teaspoon salt
    ·1/4 teaspoon ground pepper
    ·2 pounds lean ground beef
    ·1 1/2 cups grated sharp cheddar cheese


    1.Preheat Smoker.
    2.Cook the bacon crispy and crumble into small pieces. Set aside.
    3.Sauté the onion, celery, pepper, and garlic together until the onion is soft and translucent.
    4.In a large bowl, mix the parsley, bread pieces, eggs, Worcestershire sauce, salt, and pepper.
    5.Add the bacon and sautéed vegetables.
    6.Mix the ground meat and cheese into the mixture in the bowl.
    7.Mold into loaf pan .
    8.Smoke until the meatloaf registers internal temperature of 160º F.
    9.Let stand for ten minutes.




    Next time I may try a mixture of ground beef and ground pork.

    Sounds good Dionysus....ya can also try laying some bacon strips over the top...mmmmm, good stuff!

    Usually I see pics on here and I want to try whatever it is that is smoked because it all looks so good. This time I want to try making that meatloaf so I can upload pics of it and then look at them because man that sounds good!

    Question/comment...
    Have never tried to smoke meatloaf but I would assume in a loaf pan the smoke only penetrates from the top?
    Could you mold the meatloaf into shape and place it on a piece of foil and smoke or would the mixture not hold?

    Fire it Up,
    That's what I did with mine. Molded it in a pan and flopped it on a piece of foil. Came out just fine.

    in an attempt to make my first fattie last year, i actually made a heck of a nice smoked meatloaf similar to this. i posted the story and qview but i think it got lost in the inferno.
