Hi guys, got a Brinkman SNP from Home Depot for $189 about 3 weeks ago. Seasoned it and did a rack of ribs with store bought sauce.  me and bro liked them, wife not as thrilled.

Then I joined here...

Read about the mods to be made/tried.

Scrapped the Kingston, went with Cowboy lump charcoal

Last week took a tin foil lid for a buffet tray and wrapped it around a whiffle ball bat and inserted it in chimney.  Also took a lid and used it as a damper ( I think that was term I read here), which I placed over the heat input from the offset.  Both of these seemed to give me more stable heat.  (I also learned from first try that I didnt use enough charcoal).

Got some Hickory chunks from Home Depot and used that sparingly.

Last week ribs were real good, just going with apple juice spritzing and sauce at end, using the 3-2-1 method (2-2-1, really as went with baby back)

Now move to Christmas day, went with fried turkey in the deep fryer and 3 racks on the smoker, 2-2-1, 2 with the rub recipe bought here, and one with the sauce recipe also bought here, SMASH HIT!!!!

Everybody loved them, even my mother, who was not particulary thrilled with the concept of ribs for Christmas dinner....

Welcome to the club!  It only gets better from here!  & your fan base will grow by leaps and bounds (it's hard to hide the fact that your smoking from your neighbors ;-).

Welcome to the forum! If you can find some other type of charcoal, I think that you will be even happier. Wally World sells Red Oak Lump and it does circles around Cowboy. It burns hotter and produces way less ash. 

Glad to hear your dinner was the hit. This is only the beginning my friend

LOL.... SMF the secret weapon to making others think you are a smoking god! All my neighbors seem to find a reason to visit me on days they smell my smoker going..... hmmmmm... lol.
