Hello everyone,

I will make this short.

I am new to meat smoking and have a lot of things I am hoping to learn about. I live in Japan and am planning to build a brick smoker in the coming weeks or months.
I think I will have some issues sourcing some items due to being in Japan but for the most part I should be able to find most of it.

Hello Tom and welcome to the forum, good to have you with us. I spent some time in Japan many years ago while in the service, Island of Hokkaido. Unbelievable cultural experience, wish I was able to spend more time there. Look forward to seeing your posts and help you expand on this hobby. You should be able to show us some pretty interesting smokes from that part of the world.

Hi there. Welcome to the site. I have a friend in Japan right now also. He's in the Navy. He said good BBQ is something that he really misses. He says you can get about every kind of food there except American BBQ?

I will post up a thread documenting my brick smoker build. I am member of a couple car forums and am familiar with posting pics and build up threads so I hope I can satisfy you all with my thread although this will be my first smoker build, actually it will be my first non car build hahaha.

Any suggestions on where I should post up my build? I think propane is going to be hard to come by here in Japan so I am thinking of using wood to fuel my smoker both for heat and smoke. If I find a source for propane I may opt for propane.

Can't wait to see some of the things you can come up with, I have to figure in Japan you have such a different selection of ingredients (seafood and other) than most of us here in the States or Canada do.
Also if there is anything you would like to get ahold of or have some good Asian BBQ ingredients you would like to get or share we have a worldwide exchange program on the site where many members trade items that are local and/or hard to come by.

First off welcome Tom to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Welcome aboard! I too did some service time there, Okinawa in 72-3 including a lovely 4 month float to Fuji (cold weather package)
At the time meat was going for $15-20.00 a pound for steak and about the same for a fifth of good scotch. Glad to have the package stores on base!
I have been observing here the rise of popularity toward Kobe beef, in steaks and some hamburger. I remember the seafood there was unparalleled in the world, albeit expensive. So you should be able to find some great stuff to smoke.
It seems the Japanese were great fans of charcoal cooking, like the Koreans. We wish you well my friend!
