He everybody! New to the forum, not saying I haven't been lurking here when the need for information has led me here! :D

So as far as smoking goes, I have done jerky (deer, moose, beef, goose, and some with ground beef) I have used a little chief smoker, and a Bradly type clone, digitally controlled. I have since been using a barrel type with the smaller fire box mounted lower off to one side. Been debating building a wood stand alone "outhouse" type cold smoker... still debating!

I joined tonight, because I want to branch out. I have delusions of bacon, Montreal Smoked meat, ribs, and better brisket on my mind.

I work in the oil industry in Alberta/Saskatchewan, and am a custom knife maker. A hobby my wife is ok with because it is the only hobby I have had that pays for its self! Haha!

My friends call me Bubba. Look forward to learning a thing or three!

Welcome from a fellow Canadian, Bubba.

Sounds like you are already well on your way to being a great smoker. You will find lots of information here on all the projects you have listed. Also, the members are very generous with their experience.

I look forward to your posts.
