Hi, my name is BIll (Onemagicman) and I live in San Diego, CA.  I have been a certified KCBS & CA. judge over the years and currently am not active due to the lack of contest no longer available in Souther CA.  The money has realy dried up!

I recently retired from NAPA Auto Parts.   I love, love smoked food.

I purchased an MBS40 from Sam's Club last year and am now producing my own product at home.  I had a charcoal Brinkman years ago and what a difference in ease of use. 

While I do use the smoker too often as there is only two of at home now a days I have done ribs, pork butt and chicken a few times. I have tried brisket twice and failed so miserbly, one of them I had to through it out. 

Like in most contests they can be won or lost on a good brisket, I will master it and be in "smoker heaven." 

With spring here it is time to take the cover off and roll into the back yard and try again.

bill just keep trying , it just gets better and better. ask alot of questions, someone on this site has the answer.

thanks to all the folks on this site i have gone from throwing a few wood chips on the coals when grilling burgers to

making my own bacon and sausages. it is truly a great site, and an awsome hobby.

If you can't locate the answer just ask folks here are willing to share there knowledge. You might take a look at the 5 day e-course on smoking its chuck full of great info. We can't even imagine!  This picture really makes me appreciate what other parts of the Country go through.  Jeez...what can we say?  Come on Spring!!!
