Hello, I'm Jason from Dickson City PA, borders Scranton PA, an I did my first smoke on my new chargriller outlaw. I modded the whole thing- angle iron, gasket, lowered chimney, bbq basket, 4 new tel true thermometers, baffle, etc. The outdoor temp was between 45-50. When I first started my fire I dumped one unlit chimney of lump into the expanded steel basket. I then dumped a lit chimney of lump on top. I also added a few lumps of cherry wood. There's at least 4 inches of clearance for air under my basket.
The first two hours I seasoned the smoker and was getting temps between 275-300. And the temp was pretty even across the grate (5-10 degrees) thanks to my baffle. Later when I put my chicken on I was having trouble getting it to 225. Not sure if I was having a problem from outdoor temps or it was poor fire management on my part. Any advise would be appreciated. Time will tell when I do my next smoke. It's was just a little strange because the first two hours went so well.
Thanks to all who posted pics and info on chargriller mods, it was a big help. For doing the seasoning and the smoke I used about about 12lbs of lump charcoal and not sure how much cherry wood lumps.
 
I have a char griller with the site fire box. I'm cooking ribs today. I h haven't made any mods to my grill. Right now I'm a little hot t 240 but staying very consitent. I'm using lump and pecan wood. My dampers are almost closed all the way. But I live in Orlando FL.

Hey Jason, welcome to the site, not really sure without seeing pictures, I always keep my smoke stack damper wide open "always", I control my heat with the damper on the fire box, I am using an RF, but fire management is important.

I'm thinking I could have done a better job with the fire, but I don't think the weather helped. The temperature was dropping and the wind was picking up. I'm gonna fire it up Thursday after work. I'll posts some pics.
