Yesterday I used my akorn for the first time and totally screwed up my ribs. I checked the temperature gauge that came with the cooker in the oven like the instructions said and it was over by 50 degrees. So I set my temperature on the cooker around 275 which should have been around 225. I was doing the 3 2 1 method of smoking so after 3 hours I go out to check the ribs and wrap them in tin foil and they were burnt on the outsiders and overcooked. I was using a pizza pan as a heat deflector. I don't know if the pizza pan had anything to do with it or not. I plan on getting a smoking stone and a wireless thermometer for it. Can anyone give me some advice on a good thermometer?
