Now I am kind of chasing the temp to get it back up there, that first batch of charcoal burned through really quick, got another half chimney going and in the firepit, at this rate I am going to run out of charcoal.. not sure why it is burning so much faster than my first smoke last Saturday.
I may cheat - I am using 3-2-1, I may do the 2 hour part in the oven... then open them up and do the last hour on the smoker.
I am only into the first hour and a half right now.
Not to criticize but if I lived where you do I would be looking to build a more permanent structure. Maybe a trellis which would allow you to add a canvas cover when needed (I'd angle it a bit so it would drain off the back of the deck. I like the EZ-Ups but when there is wind they can be a bit problematic.
Here in the Pacific Northwest if we let rain and wind and snow stop us, we'd never get to do anything outdoors. The quick covers work great. If you have a Harbor Freight near you they have some of the better prices, especially when on sale. The covers also make the operation on a hot sunny day more bearable!!!
