I've been reading the forum for about 3 months now.  I've purchased an MES 30 with window and have had moderate success smoking. 

Here's what I've done so far.

Ribs - first time turned out really tough.  Will try the 221 method next time!

Fattie - turned out excellent!

Pork loin - bacon wrapped, excellent!

Chicken Legs - too much smoke, almost made me sick after eating a couple.

Whole Chicken - one of the best most juiciest chickens I've ever had!

Here's what I want to do next.

Pork Butt

Ribs till I get them to perfection.

Sausage/Ring Balogna after I shoot another deer this fall.

Hello and welcome to SMF! I haven't done baby backs but spares I do 3-2-1 and mine have always come out wonderful. I have an MES 40. The link Pineywoods gave is great, I did PP about a week ago and followed that except I did no foil method and the bark was great!
