Cut the tomatoes in half, combine in a large plastic with EVOO and minced garlic... place on hot oiled grill for 15-20 minutes, add seasoning (I used Mike's, Shake Like Heck!)... I cut the tops off the garlic and hit the cut ends with EVOO... Roast the peppers... ... pull the tomatoes and let cool. I swear the peppers started screaming when I put them on the grill... SHAZAM! Tomato, pepper, garlic, cilantro, a little EVOO (for shine), lime and seasoning to taste. I put it in a disposable container due to the peppers. Consume with CAUTION!!!
