I want to make Garlic Summer Sausage on my smoker,  what kind of casing should I use, Collagin? and what size do I get.  Livin my smoker and want to venture on to Summer Sausage.  Thanks for your help

I'm not sure what the protocol is for summer sausage but........I sure love the "snap" of natural casing when I make sausage...provides a textural medium that relives "old world" texture. Flavor may be the same but hte first bite says it all.......

I use fiberous casings for summer sausage, the 1lb size. You can get them thru LEM or BPS along with any number of places like Butcher Packer. Once you make your own, you'll never buy store bought SS again!
 
Fiberous like smokeamotive said.That is what we use.There are different sizes also.Just a matter of opinion on that.
