I acquired a Brinkman charcoal smoker with my house and now I'm ready to try it out. I was born and raised in NC. I live in Wilmington (east coast). I'm very familiar with the east vs west bbq style differences. I prefer eastern style but love any good smoked pork.
I'm a little overwhelmed with all the info on the internet. I've used an electric smoker years ago but never charcoal. I'm planning to smoke a couple butts this weekend.
My main concern is planning for enough time and setting up the charcoal to be efficient. Any tips I appreciate.
