I took the trimmings from the spare ribs I made yesterday and crisped them up in a skillet. Toasted some corn tortillas, spread a little chipotle puree on the tortilla and topped with some guacamole, cabbage, green onions, jalapeno and cilantro.
Always wanted to try some carnitas on the grill/smoked. They/we sell them around here in the meat department, labeled as such (carnitas). Can't believe I work for HEB, and have never thrown any of these on.

Did you make your own chipotles or was it from a can? I plan on smoking my own this summer, just need a good adobo sauce recipe.

I used canned chipotle and blend them up with a stick blender. One of my favorite ways to make them is to blend a couple of cans with a block of guava paste. You only get a hint of guava and a little sweetness as the chipotles are so strong but it works really well.
I have made them myself with dried chipotle but it takes a while to clean them and soak them. I've been thinking of smoking some jalapenos and really making my own now that I have a smoker.
From the south not southwest. I have family in Mexico City and they eat a lot of chipotle. I will bring back bags of moritas when I visit in Mexico. I'm sure you know of moritas. Smaller than the smoke jalapeno. Little red chiles that are smoke. I find them a little spicier than the larger smoked jalapenos.
