Made some carnitas for my newly prego wife yesterday. They were a little too salty for my liking. I'd probably skip the seasoning salt next time and go with something a little more mild like greek seasoning. Also will use fresh onion and fresh garlic instead of the powder next time. Trial and error, I guess. Apologies for the crappy cell phone pics. Enjoy!

Bonus: Also made some roasted/smoked almonds in the oven for snacks.....only have a pic of the ingredients. The final product just looks like toasted almonds!
 
Looks good but why not toss the meat into the smoker instead of the oven?

One tip about the seasoning salt, you said it was pretty salty.
A lot of seasoned salts contain not only salt but MSG as well. Now I completely agree that MSG is no worse for you than salt is but when you combine the two of themin one product it is excessive, kind of like sugar AND High Fructose Corn Syrup, no need to add them both to any one product.
The next time you could skip the seasoning salt like you suggested, add your other ingredients and a bit of kosher salt and you will be good to go.

P.S. What's with the liquid smoke?
 
I was a bit hesitant to use the seasoning salt when I read the recipe. Lesson learned.

It was cold, rainy, and crappy in Iowa yesterday. Not a good day to get the smoker out. The recipe I used called for the liquid smoke. I used very little as I wasn't looking for a strong smoke flavor.
 
I agree pork looks like it turned out ok,

and instead of the oven go traditional, and cook it in lard and citrus juice vs the smoker or oven.

I thought this would be a little bit healthier way to go. I would like to someday try it the traditional way!

Everything looks great but I'm with Jim (fire it up) on this one why didn't you throw it into the smoker. Ok weather I'll buy that one but next time the smoker.
