To all. I purchased a used electric smoker by madterbuilt. It works fine for maintaining a constant temperature of 110 degrees for smoking fish. I cannot however get the wood chipd to start burning and smoking. Is there a secret?
I am a ocean fisherman and fish up to once a week out of s an diego. Always fresh fish in freezer.
I am looking for help with wood chip smoke issues snd recipes for brining fish. Fred

Welcome Fred !!!!

An MES is about useless for smoking at low temps, and not too good at smoking at higher temps.

What you need to look into is an AMNPS. You can fill it with pellets, light it, and sit back and relax while you get perfect smoke for up to 12 hours, without touching it. The set it & forget it MES matched up with an AMNPS makes smoking very easy.

I'd be lost without mine!!
