Canned Smoked Pork Butt

We really like canned pork, makes some tastey an easy meals, so I wanted to try somethin a bit different. I smoked a butt yesterday an pulled it at 170° an refrigerated it.

I then cubbed it, warmed it up in the oven an pressure canned it! Smells really good! Will find out next weekend!



I'm gonna post a step by step on our blog fer the folks who be interested. It'll be just a bit there, gotta go to the hospital (yuck) an see my sister, she had a knee replacement.

Cool tip, I'm real interested in how it comes out. and I didn't know ya had a blog, I'll have to check it out.
 
I have never heard of this canned ham or is it the same as the canned ham we are all used to. That one is really perts is parts anyway. So I'll watch this one to for the outcome. I'll be seeing you real soon Tip.
 
oh, its awesome! my norwegian grandparents used to can meat. i remember being fascinated by it when it was in the jars. it looked so strange.

but i was even more excited when it came time to eat it. it was usually used in soups and stews. great flavor.
 
If you are able to get your hands on any of their original recipes it would definitely be a welcome addition to the site.
Always up for trying something new.
 
as i remember it from when i got to help them, you just added a fairly large amount of salt to the water that went in the jars with them.

the taste was that of slow roasted crock pot cooked pork. i remember there being jars of it in the fridge all winter long. in the winter she would cook up a big batch of fried potatoes with onions and then add in chunks out of the jar in the fridge for flavor.
