Canadian Thanksgiving

  1. Here in Calgary we had a mild weathered thanksgiving giving me the opportunity to smoke the turkey *yumyum*. The only problem I have found smokey any bird is that the skin becomes really chewy, almost inedible. Anyone help w/ this problem, I have heard deep frying after smoking helps. Not looking forward to investing in another "power tool" if not needed.

    Higher temp later in your smoke. Maybe when you hit 145F crank that up to 350F.
