My wife and I feel BBQ in the southern U.S. puts Canadian BBQ to shame. With this in mind we are trying to bring the taste of the south up to Canada. Im starting out with a Bradley digital smoker and hope to move to a mroe traditional smoker over the next couple of years.
I hope to meet a group of people that can share tips and theories on proper smoking. With the proper advice and a lot of practice we hope to bring that wonderful flavor you can only get from low and slow. So far I have smoked a pork sholder and a rack of back ribs. We were very happy with the results and cant wait for the weather to get over freezing again so we can try a whole bunch of types of meet, smoke times, dry rubs, and injections.
I have purchased a book for beginner smokers and keep reading web site postings and find there is a fair bit of discrepency in cookking times and temperatures. Im planning to spend a fair bit of time on the forum this year and hope to hear from you all soon!!!
