Hello, I had two pack of tenderloins that I wanted to make into Canadian Bacon with the buck board bacon cure. Each pack was about 2.5 pounds so I have about 5 lbs of meat. When I opened the packs I found that there were two tenderloins in each pack. The buckboard instructions are for 10 days with a shoulder. Now I'm thinking that that is much thicker and it will take longer for the cure to penetrate. I was thinking I should shorten the curing time down to maybe 7 days since they are smaller and will require less time for the cure to penetrate.
