Can you smoke snack sticks right after stuffing??

    Kinda in a hurry today and was wondering if you can mix, stuff and smoke snack sticks all in the same day or do they need to sit before smoking??? Feeling kinad stupid asking this because I've probably made 500#s of sticks over the years just never smoked right after stuffing.

    The Wedliny Domowe site says one option for curing is to stuff and let rest for two hours at room temperature and then smoke.

    :yeahthat: .... Or you can hang them in the smoker at say 70-80 deg. to dry for a couple hours and start cold smoking before you turn up the heat to cook them...

    Cure added to ground meats penetrates really fast.... faster than if you added it to hunks, or a whole muscle....
