Can I make this happen or do I put of cook

I was planning on smoking some beef ribs for Saturday night.  Yesterday plans changed a bit and I now have to run one of the kids to an event and will not be home from 3:00-8:00 Saturday. I'm guessing by the size of the ribs, it will be a 6 hour or so cook. 

for those of you with experience with beef ribs, is this something I could still cook?  Grill is a Blazin Grill works Grid Iron pellet grill. 

If I put the ribs on at 3:00 and cook them straight through until 8:30 or 9:00, can I expect a decent product, or will I regret not foiling after 3 hours.?
 
I feel you may need more time , Beef Ribs have a lot of collagen and fat to render out .

You will have no problem with no wrapping . Naked smoked Beef gives a great Bark and continues to be juicy .
