So in 30 minutes I'm gonna take this liver off and keep it in the fridge till tomorrow.. then I'm gonna treat it as a lb of fresh liver.. cook it in butter at high temp for 2 or 3 minutes in cast iron.. eat it with caramelized onions.. potatoes..
I will take a pic as I flip it in a few and another as I bag it for tomorrow.
I'm gonna leave that buttermilk coating on the liver till I cook it tomorrow.. I will add black pepper and salt to flour , dredge the liver in that and fry in hot butter.
Still was just cool to the touch. And I stored it in a baggy in the fridge.. 2 hours of smoke. I could smell it. Will see what it tastes like tomorrow.. Lol [emoji]128512[/emoji]
Turned out good.. very tender with slight smokey flavor. I would not bother smoking liver again though. It's good to me plain too.. Lol [emoji]129299[/emoji]. Potato salad too..
