Wanted to try a smoked meatloaf tonight and went for an old reciepe from Paul Prudhommes cookbook that we have made many many times in the oven. On the smoker - WOW - how much better is that!!!!

Had a bit of meat left over, so made some of Treegje's meat balls with cheese in the middle. Super. Thanks, Treegje for posting this reciepe. A great snack.

That meatloaf looks delicious. Please don't take this the wrong way, but nice balls you have there.

Most of you knowing my propensity for taking a line like the above and running wild with it I hope my SMF friends will appreciate the extreme will power I have had to employ to keep my mouth shut , but I have decided that discretion is the better part of valor* and am stifling myself this one time only.

Now that is one of the best dinners I have seen in a while. That meatloaf should be called meat salad for sure.
 
"Balls from hell", reminds me of when I stepped on a rake. Actually, the entire idea sounds really tasty just based on the ingredients. Cajun taste is one of my favs. It's all good my friend.
